Creamy carbonara sausage pasta recipe

Kid-friendly twist on carbonara with sausage and brussels sprouts.
Ingredients:
  • 375g farfalle pasta
  • 8 beef sausages, casings removed
  • 400g brussels sprouts, halved lengthways
  • 1/2 tsp dried chilli flakes, plus extra to serve (optional)
  • 490g jar carbonara pasta sauce
Instructions:
  • Cook the pasta in a large pot of boiling water according to package instructions until al dente. Reserve 1/2 cup (125ml) of the cooking liquid before draining.
  • Heat a large non-stick frying pan over high heat and cook the sausage, breaking it into lumps with a wooden spoon, for 5 minutes or until browned and cooked through.
  • Transfer brussel sprouts to the pan and sauté until golden brown, stirring occasionally for about 5 minutes. Introduce optional chilli flakes and sauté for 30 seconds until fragrant. Incorporate pasta, pasta sauce, and reserved cooking liquid. Bring to a gentle simmer. Season to taste. Cook until thoroughly combined and heated.
  • Serve the pasta mixture in individual bowls and garnish with extra chili flakes, if desired.
