Spaghetti carbonara frittata

Creamy carbonara frittata for a delicious and easy dinner twist.
Ingredients:
  • 200g dried spaghetti
  • 18.20 gm extra virgin olive oil
  • 8 shortcut bacon rashers, trimmed
  • 1 brown onion, finely chopped
  • 3 garlic cloves, crushed
  • 166.65 gm pure cream
  • 40.00 ml finely chopped fresh chives, plus extra to serve
  • 125.00 ml finely grated parmesan, plus extra shaved parmesan, to serve
  • Baby rocket, to serve
Instructions:
  • Preheat your oven to 220C/200C fan-forced. Cook the pasta in a large saucepan of boiling salted water according to the package instructions. Drain the cooked pasta, rinse it under cold water, and drain again.
  • Heat oil in a medium-high heat ovenproof frying pan. Cook bacon until golden on both sides. Transfer to paper towel to drain. Add chopped bacon and onion to the pan. Cook until golden. Whisk eggs, garlic, cream, chives, and Parmesan in a bowl. Season with salt and pepper.
  • Combine the pasta and bacon with the egg mixture, then transfer everything to a frying pan. Cook over medium heat until the frittata starts to set around the edges. Sprinkle with the rest of the Parmesan and bake in the oven for 15 to 20 minutes until golden and set. Let it rest for 5 minutes, then garnish with rocket, reserved bacon, extra chives, shaved Parmesan, and a sprinkle of pepper before serving.
