Cheesy baked chicken and rice casserole with flavorful onion soup mix and creamy sauce. Ultimate comfort food.
Ingredients:
  • cooking spray
  • 2 cups rice
  • 1.5 cups shredded Cheddar cheese, divided
  • 4 skinless, boneless chicken breast halves, or more to taste
  • 2 (10.5 ounce) cans cream of chicken soup
  • 3 cups water, or more as needed
  • 1 (1 ounce) package dry onion soup mix (such as Lipton®)
Instructions:
  • Preheat the oven to 350°F (175°C) while generously greasing a 9x13-inch baking dish with cooking spray.
  • First, evenly layer the rice in the baking dish. Sprinkle 1 cup of Cheddar cheese, season with black pepper and salt. Next, arrange the chicken evenly over the rice and cheese. Dot the chicken with rounded teaspoons of cream of chicken soup. Pour water over the chicken and finish by sprinkling evenly with onion soup mix.
  • Roast in the oven for 1 hour. Test rice for doneness; if all water is absorbed, mix in 1/2 cup water for moisture. Keep cooking until chicken is fully cooked and juices are clear, around 30 minutes longer. Ensure chicken reaches an internal temperature of 165 degrees F (74 degrees C).
  • Finish the dish by generously scattering the remaining 1/2 cup of sharp Cheddar cheese on top before serving.
