Create a quick and tasty homemade soup using one pound of frozen veggies from your freezer in just 15 minutes!
Ingredients:
  • 4 oz reduced-fat prepared cheese product (from 16-oz loaf), cubed
  • 3 1/2 cups fat-free (skim) milk
  • 1/2 teaspoon chili powder
  • 2 cups cooked brown or white rice
  • 1 bag (1 lb) frozen cauliflower, carrots and snow pea pods (or other combination), thawed, drained
Instructions:
  • In a 3-quart saucepan, warm the cheese and milk over gentle heat, stirring occasionally, until the cheese is melted.
  • Infuse a rich flavor by stirring in chili powder, then add rice and vegetables to the mix. Cook everything together until piping hot.
