Quick and flavorful chicken fajita soup with fire-roasted tomatoes, fajita seasoning, and seasoned black beans.
Ingredients:
  • 2 tablespoons vegetable oil
  • 1 pound skinless, boneless chicken breasts, cut into strips
  • 1 (1.27 ounce) packet fajita seasoning
  • 1 red bell pepper, cut into thin strips
  • 1 green bell pepper, cut into thin strips
  • 1 poblano pepper, cut into thin strips
  • 1 large onion, cut into thin strips
  • 1 (15 ounce) can seasoned black beans
  • 1 (14.5 ounce) can fire roasted diced tomatoes
  • 1 (14 ounce) can chicken broth
  • 1 dash hot sauce
Instructions:
  • In a large soup pot over medium heat, warm the oil. Cook the chicken until browned, approximately 10 minutes, stirring occasionally. Coat with fajita seasoning, then add bell peppers, poblano pepper, and onion. Cook and stir over medium heat until vegetables are soft, about 10 minutes.
  • Add black beans, fire-roasted tomatoes, and chicken broth to the pot. Increase the heat to high and bring to a boil. Then, lower the heat to medium-low and simmer for 30 minutes, stirring occasionally.
  • Enhance soup with a balance of hot sauce, salt, and pepper just before serving.
