Create a DIY chicken fajita bar with a variety of toppings for a fun and customizable meal experience.
Ingredients:
  • 1 tablespoon vegetable oil, or more as needed
  • 1 onion, cut into strips
  • 1 bell pepper, cut into strips, or more to taste
  • 2 skinless, boneless chicken breast halves, cut into strips
  • 0.25 cup water, or more to taste
  • 2 tablespoons taco seasoning mix, or more to taste
  • 8 (6 inch) flour tortillas
Instructions:
  • In a skillet over medium heat, sauté onion and bell pepper in 1 tablespoon of oil until onion is soft and translucent, about 5 minutes. Transfer cooked vegetables to a plate.
  • Place chicken in the skillet, adding extra oil if necessary. Sauté until cooked through and juices run clear, approximately 5 minutes. Stir in water and taco seasoning until well combined. Simmer until sauce thickens and coats the chicken completely, about 3-5 minutes.
  • Arrange the cooked chicken and vegetables on warm tortillas.
