Spiced chicken baked with bell peppers, tomatoes, and onions for flavorful fajitas.
Ingredients:
  • 0.25 cup olive oil, divided
  • 2 pounds boneless skinless chicken breasts, cut into strips
  • 1 teaspoon garlic granules, or to taste
  • 1 teaspoon chili powder, or to taste
  • 1 pinch dried oregano, or to taste
  • 1 pinch ground cumin, or to taste
  • 1 (14.5 ounce) can diced tomatoes for chili
  • 1 large onion, cut in strips
  • 1 green bell pepper, cut into strips, or to taste
  • 1 red bell pepper, cut into strips, or to taste
  • 0.5 (4 ounce) can chopped green chiles
  • 0.5 teaspoon seasoned salt, or to taste
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C).
  • Coat the bottom of a 10x14 glass dish with a luxurious 2 tablespoons of olive oil, then gracefully place the chicken strips in the dish.
  • In a small bowl, mix together the 2 tablespoons of olive oil, garlic granules, chili powder, oregano, and cumin. Rub this flavorful mixture over the chicken. Add tomatoes, onion, green bell pepper, red bell pepper, and green chiles, then mix everything together thoroughly. Finish by sprinkling seasoned salt over the top.
  • Place the chicken in the preheated oven, letting it cook uncovered until the center is no longer pink and the juices run clear, for approximately 30 minutes. Ensure the chicken reaches an internal temperature of at least 165°F (74°C) by using an instant-read thermometer.
