Easy chicken satay skewers grilled to perfection, served with homemade peanut sauce.
Ingredients:
  • 0.5 cup coconut milk
  • 1 clove garlic, minced
  • 1.5 teaspoons brown sugar
  • 1 teaspoon curry powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.75 pound skinless, boneless chicken breast halves - cut into 1 inch strips
  • 10 (6 inch) wooden skewers, or as needed, soaked in water for 30 minutes
  • 1 cup coconut milk
  • 0.75 cup chicken stock
  • 0.5 cup creamy peanut butter
  • 0.25 cup brown sugar
  • 1 tablespoon curry powder
  • 2 tablespoons lime or lemon juice
  • 1 teaspoon soy sauce
  • salt to taste
Instructions:
  • Prepare the marinade by combining coconut milk, garlic, brown sugar, curry powder, salt, and pepper in a large glass or ceramic bowl. Add chicken and mix well to ensure even coating. Cover the bowl with plastic wrap and refrigerate for a minimum of 2 hours.
  • Get your outdoor grill ready by preheating it to a sizzling medium-high temperature, then give the grate a light coating of oil.
  • Take the marinated chicken out of the marinade and gently shake off any extra. Skewer the chicken pieces; discard the remaining marinade.
  • For the peanut sauce: In a saucepan over medium-high heat, combine coconut milk, chicken stock, peanut butter, brown sugar, and curry powder. Simmer, whisking constantly, until smooth and thickened, about 5 minutes. Remove from heat and stir in lime juice, soy sauce, and salt.
  • Grill the chicken skewers on high heat until cooked through, about 4 to 5 minutes per side. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C).
  • Drizzle warm peanut sauce over skewers before serving.
