Whip up some mouthwatering chilaquiles with crispy tortilla pieces, scrambled eggs, zesty green taco sauce, and gooey Monterey Jack cheese. Delicious and simple!
Ingredients:
  • 8 (6 inch) corn tortillas, cut into 2-inch pieces
  • 5 tablespoons vegetable oil
  • 8 eggs, beaten
  • salt and ground black pepper to taste
  • 0.5 cup green taco sauce
  • 1 cup shredded Monterey Jack cheese
Instructions:
  • In a skillet on medium-high heat, fry tortilla pieces in oil until they are crispy, for about 5 minutes.
  • Drizzle beaten eggs over the tortilla pieces in the skillet, then sprinkle with salt and pepper. Cook until eggs are just set, stirring occasionally, for about 4 minutes. Remove from heat and garnish with taco sauce and Monterey Jack cheese.
