Master the delicious Mexican dish chilaquiles by simmering fried corn tortillas in salsa and serving with cheese, eggs, or beans for a satisfying breakfast.
Ingredients:
  • 1 dozen corn tortillas, preferably stale, or left out overnight to dry out a bit, quartered or cut into 6 wedges
  • Corn oil
  • Salt
  • 1 1/2 to 2 cups red chile sauce or salsa verde, store-bought or homemade (see end of recipe for homemade versions)
  • A few sprigs of epazote (optional)
  • Garnishes
  • Cotija cheese or queso fresco
  • Crema Mexicana or creme fraiche
  • Chopped cilantro
  • Chopped red onion
  • Avocado, sliced or roughly chopped
Instructions:
  • Fry the tortillas: Heat a generous amount of corn oil in a large sauté pan over medium-high to high heat. Once the oil is hot, add the tortillas and fry until golden brown. Transfer the tortillas to a paper towel-lined plate to absorb excess oil, sprinkle with a touch of salt, and wipe the pan clean of any leftover bits.
  • Sizzle the salsa: Pour 2 tablespoons of oil into a hot pan. Add the salsa and cook for a few minutes. For extra flavor, toss in a few sprigs of epazote.
  • Toss fried tortilla quarters in salsa: Mix the fried tortilla quarters gently with the salsa until well coated. Let cook for a few more minutes, then remove from heat. Serve with garnishes, fried eggs, and beans or nopalitos. If you enjoyed the recipe, please leave a rating and comment!
