Microwave chocolate pudding ready in minutes, irresistibly easy and fool-proof.
Ingredients:
  • For the pudding
  • 1/2 cup sugar
  • 3 tablespoons cornstarch
  • 2 tablespoons Dutch-processed cocoa powder
  • 1/8 teaspoon salt
  • 2 1/2 cups whole milk
  • 3 egg yolks
  • 4 ounces (about 3/4 cup) 60 to 70% chocolate baking chips
  • 2 tablespoons unsalted butter, cut into chunks
  • For the whipped cream (optional)
  • 1 cup heavy cream
  • 2 teaspoons sugar
  • 1/2 teaspoon vanilla extract
Instructions:
  • In a medium microwave-safe bowl, mix together sugar, cornstarch, cocoa powder, and salt until combined. Add 1/2 cup of milk and whisk until smooth. Mix in the egg yolks. Slowly pour in the remaining milk. Cover the bowl partially with plastic wrap or a paper towel to let steam escape.
  • Cook the pudding in the microwave for 3 minutes, remove the plastic cover, and whisk to distribute the heat. Microwave for an additional 1 minute, stirring again. Continue microwaving in 30-second intervals, stirring each time, until the mixture is bubbling around the edges and thick enough for the whisk to leave a light trail.
  • Combine chocolate, butter, and vanilla: Whisk together the chocolate chips, butter, and vanilla in a bowl until melted and smooth. Stir constantly.
  • Scoop the pudding into 4 small serving cups like ramekins or tea cups. Refrigerate until cold.
  • Prepare the whipped cream: Use an electric mixer on medium-high speed to beat the cream, sugar, and vanilla until soft peaks form. Add a dollop on each serving cup and serve right away.
