Ingredients:
  • cooking spray
  • 1 (15 ounce) can pumpkin puree
  • 1.25 cups skim milk
  • 0.75 cup granular sucralose sweetener (such as Splenda®)
  • 0.5 cup egg substitute
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground ginger
  • 0.5 teaspoon ground nutmeg
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease a 9-inch pie dish with cooking spray.
  • Combine pumpkin puree, milk, sweetener, egg substitute, vanilla, cinnamon, ginger, and nutmeg in a bowl, beating until smooth. Transfer the mixture to the prepared pie dish.
  • Bake until the center is firm, approximately 30 minutes in a preheated oven.
  • Allow to cool completely before serving.
