Delicious fusion of egg and potato salad in an easy recipe.
Ingredients:
  • 1 pound potatoes
  • 4 hard-boiled eggs, mashed
  • 1/4 cup mayonnaise
  • 2 tablespoons minced onions
  • 1 tablespoon mustard
  • 1 stalk diced celery
Instructions:
  • In a large pot, submerge the potatoes in salted water and bring to a boil. Simmer over medium-low heat until tender, for about 15 to 20 minutes. Drain the potatoes, then peel and cut into 1/2-inch cubes once they are cool enough to handle.
  • Combine potatoes, eggs, creamy mayo, tangy mustard, crunchy onion, and crisp celery in a bowl. Mix thoroughly until all ingredients are well incorporated. Refrigerate for a minimum of 1 hour before serving.
