Family favorite baked "doughnuts": fluffy muffins coated in a delicious cinnamon-sugar glaze.
Ingredients:
  • 1.75 cups all-purpose flour
  • 0.75 cup milk
  • 0.33333334326744 cup vegetable oil
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon ground nutmeg
  • 0.25 cup butter, melted, or more to taste
  • 0.33333334326744 cup white sugar, or more to taste
  • 1 tablespoon ground cinnamon, or more to taste
  • 1 teaspoon ground nutmeg, or more to taste
Instructions:
  • Preheat the oven to 350°F (175°C) while preparing a mini muffin tin with cooking spray or paper cups.
  • Combine flour, sugar, milk, vegetable oil, egg, baking powder, salt, 1/2 teaspoon nutmeg, and 1/2 teaspoon ground cinnamon in a bowl. Mix until ingredients are well combined with some lumps remaining. Spoon dough into muffin tin.
  • Bake in the preheated oven for about 15 minutes, or until the tops spring back when lightly pressed but are not golden brown yet.
  • Drizzle melted butter into a bowl. Combine 1/3 cup sugar, 1 tablespoon cinnamon, and 1 teaspoon nutmeg in another bowl. Dip muffins in the butter, then coat them with the cinnamon mixture.
