Easy Dulce de Leche Sandwich Cookies

Easy Halloween cookies with sweet dulce de leche filling made with Betty Crocker® sugar cookie mix.
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
  • 1 teaspoon apple pie spice
  • 1/3 cup butter, softened
  • 1 egg
  • 1 can (13.4 oz) dulce de leche (caramelized sweetened condensed milk)
  • 1/2 cup chopped unsalted peanuts
Instructions:
  • Combine cookie mix, apple pie spice, butter, and egg in a large bowl, stirring until a soft dough forms. Cover the bowl and refrigerate for 30 minutes.
  • Preheat oven to 375°F. Roll out dough on a lightly floured surface to 1/4-inch thickness. Use a floured 2-inch round cookie cutter to cut out shapes. Place the cutouts 2 inches apart on ungreased cookie sheets.
  • Bake for a perfectly set texture, 7 to 9 minutes. Allow to cool for 5 minutes before transferring to a cooling rack to cool completely.
  • Spread 2 teaspoons of delicious dulce de leche on one cookie, making sure to reach the edges. Place another cookie on top, gently pressing down to ooze out a bit of filling. Roll the edges in peanuts for extra crunch.
