Easy Eton mess

A twist on the classic British Eton mess: Use store-bought meringues, mix cream with Greek yoghurt for a lighter option. Customize with all cream or all yoghurt for more indulgence. Option to make homemade meringues for an extra touch.
Ingredients:
  • 300 g fresh strawberries
  • 150 g fresh raspberries
  • ½ tablespoon runny honey
  • 100 g double cream
  • 100 g low-fat Greek-style yoghurt
  • 100 g shop-bought meringues
Instructions:
  • Cut any large strawberries in half or quarters and combine them with the raspberries in a large bowl. Use a fork to lightly crush half of the berries, then drizzle them with honey. Whip the cream until soft peaks form, and gently fold in the yogurt. Crumble the meringues over the fruit, then fold in the cream and yogurt mixture. Portion into 6 individual bowls and serve immediately, garnished with extra berries, if desired.
