Indulge in a delightful orange and strawberry Eton mess for a special celebration!
Ingredients:
  • 500g strawberries, hulled, halved
  • 2 tsp finely grated orange rind
  • 505.00 gm thickened cream
  • 250.00 ml thick vanilla yoghurt
  • 100g small meringues, chopped
Instructions:
  • In a large frying pan over gentle heat, combine strawberries, sugar, and orange rind. Cook until sugar dissolves and strawberries begin to soften, about 4 to 6 minutes. Transfer mixture to a heatproof bowl, cover, and let it sit for 10 minutes. Chill in the refrigerator until cool, about 10 minutes.
  • Using an electric mixer, whip cream until soft peaks form, then gently fold in yogurt. Swirl the strawberry mixture and meringue into the cream mixture. Spoon onto plates and serve.
