Spicy rubbed beef flat iron steaks with red wine mushroom sauce. Sear and serve.
Ingredients:
  • 2 (6 ounce) flat iron steaks
  • 2 tablespoons olive oil
  • 0.125 teaspoon cayenne pepper, or to taste
  • 1 teaspoon ground black pepper
  • 1 tablespoon ground paprika
  • 1 teaspoon salt
  • 1.5 teaspoons dry mustard powder
  • 1.5 teaspoons garlic powder
  • 3 tablespoons olive oil
  • 0.5 cup dry red wine
  • 1 cup sliced portobello mushrooms
Instructions:
  • Let the steaks sit out until they reach room temperature.
  • Combine 2 tablespoons of olive oil with cayenne pepper, black pepper, ground paprika, salt, mustard powder, and garlic powder in a small bowl to create a flavorful paste.
  • Pierce steaks with a fork and massage generously with the flavorful spice rub, ensuring it permeates the meat evenly.
  • In a large, heavy skillet over high heat, heat the remaining 3 tablespoons of olive oil until it starts to smoke. Sear the steaks quickly until the outside browns but the center remains rare and just heated through, about 2-3 minutes per side. The center should register 115°F (46°C) on an instant-read thermometer.
  • Using tongs, transfer the steaks from the skillet. Add dry red wine to the skillet and bring to a boil, deglazing the bottom with a wooden spoon. Stir in sliced portobello mushrooms and cook for about 5 minutes until they release their liquid and are cooked.
  • Place the steaks back in the skillet over the flavorful mushroom-wine sauce. Simmer on low heat until the sauce thickens, about 5 minutes. Transfer the steaks to a serving platter and generously ladle the mushroom sauce on top to serve.
