Easy-to-make cupcakes with beautiful marshmallow flower decorations - perfect for both adults and kids!
Ingredients:
  • 6.5 tablespoons unsalted butter, at room temperature
  • 6 tablespoons white sugar
  • 1 teaspoon vanilla sugar
  • 2 small eggs
  • 1 teaspoon vanilla extract
  • 0.75 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 0.25 cup unsalted butter
  • 0.25 cup cream cheese, softened
  • 1 cup confectioners' sugar, or as needed
  • 0.5 teaspoon vanilla extract
  • 8 large marshmallows
  • 0.5 cup assorted colored sprinkles
  • 8 candy-coated milk chocolate pieces (such as M&M's®)
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare 8 muffin cups by greasing them or lining them with paper liners.
  • In a bowl, mix together 6 1/2 tablespoons of butter, sugar, and vanilla sugar until light and fluffy using an electric mixer. Gradually add the eggs one at a time, beating well after each addition. Stir in 1 teaspoon of vanilla extract until the mixture is smooth.
  • Combine flour, baking powder, and salt in a separate bowl. Add the mixture to the batter and beat for 5 minutes. Spoon the batter into the muffin cups, filling each 3/4 full.
  • Bake in the preheated oven for 14 minutes until the tops spring back when lightly pressed. Allow them to cool in the tin for 5 minutes before transferring to a wire rack. Let the cupcakes cool for about 20 minutes. It's okay if they sink slightly after baking, as it creates a flat surface for decorating with flowers.
  • In a bowl, mix together 1/4 cup butter and cream cheese using an electric mixer until smooth. Gradually add confectioner's sugar, beating well after each 1/4 cup added. Stir in vanilla extract after half of the sugar is mixed in. Set aside.
  • Place vibrant colored sugar in separate small bowls. Slice each large marshmallow into 5 pieces. Dip each marshmallow slice, cut side down, into the colored sugar to coat. Repeat with the remaining marshmallow slices and different colors.
  • Frost each cupcake and artfully arrange 5 marshmallow slices on top as flower petals, then finish with a candy-colored chocolate piece in the center.
