Elevate fried chicken drumsticks with a flavorful garlic buttermilk batter.
Ingredients:
  • 375ml buttermilk
  • 2 garlic cloves, crushed
  • 8 Chicken Drumsticks
  • 1kg Red Royale potatoes, cut into wedges
  • 150g plain flour
  • 7.50 gm smoked paprika
  • 1 tsp cracked black pepper
  • Rice bran oil, to shallow-fry
  • 200g mayonnaise
  • 20.00 ml drained capers, rinsed
  • 20.00 ml fresh dill, chopped
  • 1 gherkin, finely chopped
  • Mixed salad leaves, to serve
Instructions:
  • In a large shallow ceramic or glass dish, mix the buttermilk and garlic. Add the chicken, ensuring it is well coated. Season the chicken, cover the dish, and refrigerate for 2 hours to marinate.
  • Preheat the oven to 200C and prepare 2 large baking trays by lining them with baking paper.
  • Mix the potato and olive oil in a large bowl, ensuring they are well coated. Season generously with your favorite herbs and spices. Spread the potato mixture on a lined baking tray and bake for around 30 minutes, or until the potatoes are tender and golden brown.
  • In a bowl, mix flour, paprika, and pepper, then season. Coat the drained chicken pieces in the flour mixture. Heat rice bran oil in a large frying pan and fry chicken until golden, about 5 minutes. Transfer chicken to a baking tray and bake for 30 minutes or until cooked through.
  • Mix the mayonnaise, capers, dill, and gherkin in a small bowl.
  • Plate the chicken alongside tartare sauce, potato wedges, salad leaves, and lemon wedges.
