Easy fruit mince pies made with shortcut pastry ready in 30 minutes.
Ingredients:
  • 3 sheets frozen Shortcrust Pastry, just thawed
  • 2 x 410g jars fruit mince
  • 1 Free Range Egg, lightly whisked
  • 15.00 gm raw sugar
  • Icing sugar, to dust
Instructions:
  • Preheat the oven to 200°C and lightly grease a 12-hole muffin pan with a 1/3 cup (80ml) capacity.
  • Cut twelve 9cm discs from the pastry sheets. Gently press them into the prepared pans. Fill each pastry case with fruit mince, smoothing the surface.
  • Cut six 7cm discs from the leftover pastry sheet, then cut a 4cm star from each disc. Place a star on half the pies and a disc on the remaining pies, sealing the edges firmly.
  • Gently glaze pastry with beaten egg, then generously sprinkle with raw sugar. Bake until pastry turns golden, about 20 minutes. Allow to cool for a bit in the pan, then dust with a light layer of icing sugar. Enjoy warm or at room temperature.
