Indulge in the classic holiday treat, fruit mince pies, for a festive touch to your Christmas celebration.
Ingredients:
  • 500.00 ml plain flour
  • 150g butter, chilled, chopped
  • 53.75 gm caster sugar
  • 40.00 gm iced water
  • 500.00 ml fruit mince (see note)
  • 1 egg, lightly beaten
  • 40.00 ml white granulated sugar
  • Icing sugar mixture, to serve
Instructions:
  • In a food processor, blend flour, butter, and sugar until it forms a breadcrumb-like mixture. Add egg yolk and iced water. Process until the dough just starts coming together, adding more water if needed. Split the dough in half and form 2 discs. Wrap in plastic and chill for 30 minutes or until firm.
  • Preheat your oven to 180C/160C fan-forced and generously grease 24 x 6.7cm (top) fluted loose-based mini tartlet pans.
  • Roll out the dough to 3mm thickness between two sheets of baking paper. Use an 8.5cm-round cutter to cut out 24 rounds, re-rolling any scraps. Line the pans with the dough rounds on a baking tray, and evenly distribute the fruit mince in the cases.
  • Roll out the rest of the dough between parchment paper until 3mm thick. Cut out 24 large stars with a 6cm star-shaped cutter, rerolling any dough scraps. Then, use a 2cm star-shaped cutter to cut a small star from the center of each large star and discard the small stars. Place the large stars over the fruit mince, lightly brush them with egg, and sprinkle with white sugar.
  • Bake for 20 to 25 minutes until the pastry turns golden and firm. Let it cool in the pans for 10 minutes, then delicately move to a wire rack to cool down completely. Dust with icing sugar before serving.
