Garlicky vinaigrette green bean salad, perfect for picnics or potlucks.
Ingredients:
  • 2 pounds fresh green beans, trimmed
  • 0.5 cup balsamic vinegar
  • 0.33333334326744 cup extra-virgin olive oil
  • 1 small sweet onion, thinly sliced
  • 1 clove garlic, minced
  • 2 teaspoons chopped fresh parsley
  • 1 teaspoon white sugar
  • 1 teaspoon salt
Instructions:
  • 1. Bring a generously salted pot of water to a vigorous boil. Add green beans and cook uncovered until tender yet crisp, 7 to 10 minutes. Monitor regularly to prevent overcooking.
  • In a large bowl, combine vinegar, olive oil, onion, garlic, parsley, sugar, salt, and pepper, whisking until well combined.
  • Drain green beans and toss in dressing while warm. Let them marinate at room temperature for at least 1 hour. Serve chilled or at room temperature.
