Lemon dill green bean salad: a summer must-have for weeknights and cookouts!
Ingredients:
  • 1 1/2 pounds fresh green beans
  • 3 tablespoons fresh dill, minced
  • 3 tablespoons red onion, minced
  • 1 1/2 tablespoons Dijon mustard
  • 1 1/2 tablespoons olive oil
  • Zest of 1 lemon
  • Juice from 1/2 lemon (about 1 1/2 tablespoons)
  • 1 tablespoon + 1/2 teaspoon kosher salt, divided
  • 1 teaspoon freshly ground black pepper
Instructions:
  • Prepare the green beans: Wash the green beans and trim off the stem ends while bringing salted water to a boil in a large saucepan, aiming for a salty seawater flavor.
  • Prepare the green beans: Place trimmed beans in boiling water for 3 to 4 minutes until vibrant in color and cooked to a crisp-tender texture. Taste for doneness. Drain and rinse beans in cold water to stop cooking, then gently dry with a towel.
  • Prepare the dressing in the serving bowl by whisking together dill, minced onion, Dijon mustard, olive oil, lemon zest, lemon juice, 1/2 teaspoon salt, and pepper. Add the beans and toss well to coat. Serve at room temperature as a side dish or enjoy a generous portion as a main meal. Feel free to indulge!
