Effortlessly grilled shrimp fajitas with customizable toppings like guacamole, salsa, and sour cream.
Ingredients:
  • 1 red bell pepper, sliced into thin strips
  • 1 green bell pepper, sliced into thin strips
  • 1 large onion, sliced into thin strips
  • 1 large fresh jalapeno pepper, sliced
  • 2.5 teaspoons fajita seasoning mix, divided
  • 1 teaspoon olive oil
  • 12 ounces raw large shrimp, peeled and deveined
  • 1 tablespoon lime juice
  • 8 (6 inch) fajita-size flour tortillas
Instructions:
  • Prepare the outdoor grill by preheating it to medium-high heat and lightly oiling the grate.
  • In a large bowl, combine bell pepper strips, onion, and jalapeno slices with 2 teaspoons of fajita seasoning and olive oil. Mix until well coated.
  • In a separate bowl, combine shrimp with the remaining 1/2 teaspoon of fajita seasoning and lime juice. Mix gently until evenly coated.
  • Transfer the vegetable mixture to a grill basket and cook for 10 minutes. Add shrimp, stir, and grill for an additional 5 minutes. Remove the basket from the grill.
  • Grill tortillas for 2 minutes until toasty. Fill them with the delicious filling and enjoy.
