Easy Ground Turkey Lo Mein

Quick and satisfying turkey lo mein with crunchy water chestnuts and celery.
Ingredients:
  • 1 (8 ounce) package dried lo mein noodles
  • 4 teaspoons toasted sesame oil, divided
  • 1 pound lean ground turkey
  • 1 cup diced onion
  • 1.5 tablespoons minced garlic
  • 1 (15 ounce) can low-sodium chicken broth
  • 1 (8 ounce) can water chestnuts, drained and sliced
  • 0.25 cup low-sodium soy sauce
  • 1 envelope onion soup mix
  • 3 cups chopped celery, 1/4-inch pieces
  • 1 cup sugar snap peas
  • 0.25 cup diced red bell pepper
  • 1 (12 ounce) package fresh mung bean sprouts
  • 1 pinch red pepper flakes
Instructions:
  • Bring a large pot of water to a boil and cook noodles for about 6 minutes, stirring occasionally, until tender. Drain the noodles and toss with 1 teaspoon of sesame oil.
  • In a large saucepan over medium heat, warm the rest of the sesame oil. Add in turkey, onion, and garlic. Sauté until turkey is cooked through and no longer pink, approximately 5 minutes. Remove excess grease and return the mixture to the pan.
  • Combine chicken broth, water chestnuts, soy sauce, and onion soup mix in a pot. Stir until mixed. Add celery, snap peas, and bell pepper. Cook and stir until slightly softened, about 3-5 minutes.
  • Combine the noodles and bean sprouts in the pan, stirring to mix well. Serve immediately, garnished with red pepper flakes.
