Authentic Chinese egg custard tarts, a staple in every bakery and dim sum spot.
Ingredients:
  • 1.5 cups water
  • 0.75 cup white sugar
  • 4 eggs
  • 0.25 cup evaporated milk
  • 24 (3 inch) unbaked tart shells
Instructions:
  • Preheat the oven to 425°F (220°C) for a perfectly cooked dish.
  • In a saucepan, simmer water and white sugar until sugar dissolves. Remove from heat and let cool to room temperature.
  • In a large bowl, whisk the eggs, then mix in the evaporated milk. Add the cooled sugar water and stir until fully incorporated. Place the tart shells on a baking sheet. Strain the filling through a sieve and fill the tart shells.
  • Bake until the filling puffs slightly, approximately 20 minutes in the preheated oven.
