Quick and delicious Hoppin' John made with canned black-eyed peas and instant rice, ready in under an hour.
Ingredients:
  • 1 pound smoked beef sausage, cut into bite-size pieces
  • 1 small onion, chopped
  • 3 (15 ounce) cans black-eyed peas, rinsed and drained
  • 2 (10.75 ounce) cans low sodium chicken stock
  • 0.5 teaspoon cayenne pepper, or to taste
  • 2 cups uncooked instant rice
Instructions:
  • In a large saucepan over medium heat, cook and stir the sausage and onion until the sausage begins to brown, approximately 10 minutes.
  • Combine black-eyed peas, chicken stock, water, and cayenne pepper in a pot and bring to a boil. Add rice, cover, and cook for 20 to 25 minutes until rice is tender, stirring occasionally.
