Slow-cooked Italian beef sliders - perfect party appetizers.
Ingredients:
  • 3-pound beef boneless chuck roast
  • 1 bottle (8 ounces) reduced-calorie Italian dressing
  • 9 slices (1 ounce each) provolone or mozzarella cheese
  • 2 large bell peppers, cut into rings
  • 3 rounds focaccia bread (8 inches in diameter), cut horizontally in half
Instructions:
  • Prepare the beef by trimming excess fat. Coat a 12-inch skillet with cooking spray and heat over medium-high heat. Sear the beef in the skillet for about 5 minutes, flipping once, until it is nicely browned.
  • Place the beef in a 4- to 5-quart slow cooker and pour the dressing over it. Cover and cook on low heat for 7 to 8 hours until the beef is tender.
  • Take the beef out of the slow cooker. Slice the beef thinly and put it back into the slow cooker. Cover and cook on low for an additional 20 to 30 minutes until the beef is heated through.
  • Place slices of succulent beef, gooey cheese, and vibrant bell peppers on the bottom halves of the pillowy focaccia. Cover with the top halves and slice each into 8 delicious wedges.
