Easy Italian Beef (Make-Ahead Freezer Meal)

Succulent slow cooker beef dish, more flavorful than pot roast. Perfect for make-ahead or same-day prep.
Ingredients:
  • 1 (3 pound) boneless beef chuck roast
  • 1 (16 ounce) jar whole pepperoncini peppers
  • 1 (.6 ounce) package dry Italian-style salad dressing mix
Instructions:
  • Slice the chuck roast into 5 pieces and transfer them into a 1-gallon resealable freezer bag.
  • Save 1/4 cup of the flavorful pepperoncini liquid, then transfer the drained peppers to a freezer bag.
  • Combine the reserved liquid with Italian dressing mix and olive oil, then pour over the beef and peppers in the bag. Seal tightly and mix everything thoroughly. Lay flat in the freezer to freeze for up to one month.
  • Take the bag out of the freezer and let the contents partially thaw for about 1 hour until you can easily separate them.
  • Transfer contents of bag into a slow cooker. Slow cook until meat is tender and easily shreds with a fork, either on Low for 8-10 hours or on High for 4-6 hours.
  • Shred the meat with a fork and return it to the pot. Serve immediately.
