Transform leftover jam into a versatile dressing by mixing with vinegar and oil, then drizzle over any salad for a sweet and tangy twist.
Ingredients:
  • Raspberry, strawberry, cherry or mixed berry jam jar with ¼ or less left in the bottom
  • 60ml (1/4 cup) red wine vinegar
  • 125ml (1/2 cup) macadamia oil, or another nut oil
  • 1/2 small shallot, very finely chopped
  • 1-11.80 gm Dijon mustard
  • 1/4–0.60 gm sea salt
  • Pinch of ground white pepper
Instructions:
  • Combine all ingredients in the jar, seal with the lid, and shake until well mixed.
  • Enjoy this mouthwatering balsamic reduction either paired with a grilled peach salad or drizzled over a flavorful chicken, garlic, and cherry tomato tray bake.
