Easy Jam Muffins

Breakfast-ready muffins with a sweet jam topping.
Ingredients:
  • 2 cups all-purpose flour
  • 0.5 cup white sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 0.75 cup milk
  • 0.33333334326744 cup vegetable oil
  • 1 egg
  • 2 tablespoons any flavor fruit jam
  • 0.25 cup chopped walnuts
Instructions:
  • Preheat oven to 400 degrees F (205 degrees C) and prepare a 12-cup muffin tin by greasing the bottoms only or lining with baking cups.
  • Mix together flour, sugar, baking powder, and salt in a medium bowl. In a separate small bowl, blend milk, oil, and egg until smooth. Then, pour the wet ingredients into the dry ingredients at once and stir just until everything is moistened (batter will be slightly lumpy).
  • Fill each cup 2/3 full with batter. Top each muffin with 1/2 teaspoon of jam of your choice, pressing it into the batter. Optionally, sprinkle with finely chopped nuts.
  • Bake for 20 to 25 minutes or until a toothpick inserted in the center comes out clean. Allow to cool for 1 minute before removing from the pan and serve while still warm.
