Indulge in the irresistible combination of juicy berries and sweet cinnamon sugar - a mouthwatering treat worth savoring.
Ingredients:
  • Melted butter, to grease
  • 300g (2 cups) self-raising flour
  • 155g (3/4 cup) caster sugar
  • 100g butter, melted
  • 60ml (1/4 cup) milk
  • 2 eggs, lightly whisked
  • 90.00 ml strawberry conserve
  • 36.00 gm demarara sugar
  • 1.26 gm ground cinnamon
  • Ground cinnamon, extra, to dust
  • 250ml (1 cup) pouring cream
  • 24.00 gm icing sugar mixture
Instructions:
  • Preheat your oven to 180°C and lightly brush six 200ml-capacity muffin pans with melted butter.
  • In a large bowl, combine flour and caster sugar. Mix in butter, milk, and egg until fully incorporated.
  • Divide two-thirds of the mixture evenly among the pans. Add 3 teaspoons of conserve in the center of each pan. Top with the remaining muffin mixture and level it. Mix demarara sugar and cinnamon in a small bowl, then sprinkle over the top. Bake for 20 minutes or until a skewer comes out clean. Let cool in pans for 15 minutes.
  • Whisk the cream, icing sugar, and cinnamon in a medium bowl until the mixture thickens slightly to make the cinnamon cream.
  • Plate the muffins individually and top each with a generous dollop of cinnamon cream sprinkled with extra cinnamon for an added touch of flavor.
