Jam-Filled Pine Nut Cookies

Indulge in festive jam-filled pine nut cookies this Christmas for a delicious treat!
Ingredients:
  • 1 cup butter or margarine, softened
  • 1 cup sugar
  • 2 eggs, separated
  • 1/2 teaspoon almond extract
  • 2 cups Gold Medal™ all-purpose flour
  • 1/4 teaspoon salt
  • 2 1/3 cups pine nuts
  • 1/4 cup strawberry jam
  • 1/4 cup apricot or fig jam
Instructions:
  • In a large bowl, use an electric mixer to beat butter and sugar until light and fluffy. Mix in egg yolks and almond extract. Gradually blend in flour and salt on low speed until combined. Cover and refrigerate for 1 hour before proceeding.
  • Preheat the oven to 350°F. Form the dough into 1-inch balls. Lightly whisk the egg whites in a small bowl. Coat each ball in egg whites, then roll in pine nuts, gently pressing them on. Arrange the balls 2 inches apart on ungreased cookie sheets. Use your thumb to make an indentation in the center of each ball.
  • Bake until light brown (13-15 minutes). Cool for 2 minutes, then transfer to cooling racks. While warm, press centers of cookies with thumb and fill each indentation with 1/2 teaspoon jam. Cool completely.
