Quick and easy lemon pie with a creamy filling, adorned with fresh mint, lemon slices, and whipped cream. Refrigerate until set.
Ingredients:
  • 1 (9 inch) pie shell
  • 2 egg yolks, beaten
  • 1 (14 ounce) can sweetened condensed milk
  • 0.5 cup lemon juice
Instructions:
  • Preheat your oven to 400°F (200°C).
  • Poke pie shell all over with a fork and bake in a preheated oven for 8 minutes, or until the crust turns a light golden brown. Take out of the oven and allow to cool.
  • Combine egg yolks and condensed milk in a medium mixing bowl, then mix in lemon juice. Cook the mixture in a double boiler, stirring continuously with a wooden spoon until thick. Pour into piecrust and chill for at least 1 hour before enjoying.
