Delicious lemon poppy seed muffins with lemon glaze.
Ingredients:
  • 2 cups all-purpose flour
  • 0.75 cup white sugar
  • 0.25 cup poppy seeds
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 eggs
  • 1 cup lemon flavored yogurt
  • 0.25 cup vegetable oil
  • 1 tablespoon grated lemon zest
  • 0.33333334326744 cup lemon juice
  • 3 tablespoons white sugar
Instructions:
  • Preheat your oven to a toasty 400 degrees F (205 degrees C) and give your 12-cup muffin tin a gentle greasing.
  • In a bowl, mix together flour, 3/4 cup sugar, poppy seeds, baking powder, baking soda, and salt.
  • In a separate bowl, combine eggs, yogurt, oil, and lemon zest until fully incorporated. Pour this mixture over the flour, then gently mix until just combined, being careful not to overmix.
  • Divide the batter evenly among the muffin cups and bake in the preheated oven for 20 minutes.
  • Stir together lemon juice and 3 tablespoons of sugar until the sugar dissolves.
  • Take the muffins out of the oven and gently poke the tops with a toothpick. Drizzle 1 tablespoon of lemon juice mixture over each muffin. Allow the muffins to cool in the pan for 10 minutes before taking them out.
