Whip up a flavorful lentil sausage soup effortlessly.
Ingredients:
  • 1 tablespoon olive oil
  • 1.3333333730698 pounds sausage links, cut into bite-sized pieces
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 0.5 medium onion, chopped
  • 2 cloves garlic, chopped
  • 1 pound brown lentils
  • 1 (28 ounce) can diced tomatoes
  • 2 quarts chicken stock
  • 2 large bay leaves
Instructions:
  • In a large stockpot over medium heat, heat olive oil. Cook sausage until nearly done, about 5 minutes. Remove sausage, keeping the browned bits in the pot. Add carrots, celery, and onion. Sauté until onion is soft, about 5 minutes. Stir in garlic and cook for 1 minute. Add lentils and tomatoes, stir well.
  • Add the chicken stock back into the pot and place the sausage back in. Mix well and toss in the bay leaves.
  • Bring to a lively boil over medium-high heat, then lower the heat to medium, cover, and gently simmer for 25 minutes. Finally, season with salt and pepper to taste.
