Bite-sized mac and cheese cups with creamy Cheddar and gooey mozzarella, baked in a muffin tin for a delightful twist on a classic favorite.
Ingredients:
  • cooking spray
  • 0.5 cup seasoned dry bread crumbs
  • 2 teaspoons olive oil
  • 0.5 teaspoon salt
  • 2 cups uncooked elbow macaroni
  • 1 egg, beaten
  • 1 tablespoon butter
  • 1.5 cups shredded mozzarella cheese
  • 1.5 cups shredded sharp Cheddar cheese
  • 1 cup milk
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease a muffin pan using cooking spray.
  • Combine bread crumbs, olive oil, and salt in a small bowl, mixing until fully incorporated; set aside.
  • 1. Boil a generous amount of salted water in a large pot. Cook the pasta until al dente, about 8 minutes. Drain and transfer back to the pot.
  • Mix beaten egg and butter with cooked pasta until every strand is coated. Incorporate mozzarella cheese, 1 cup Cheddar cheese, and milk until fully blended. Fill each muffin tin with the mixture. Top with the remaining 1/2 cup Cheddar cheese and bread crumb mixture.
  • Bake in the preheated oven for about 30 minutes until the topping is nicely browned. Let the mac and cheese cups rest for a few minutes before taking them out of the pan.
