Mexican-inspired one-pot taco salad with brown rice, kidney beans, tomatoes, and lettuce.
Ingredients:
  • 1.5 cups uncooked brown rice
  • 3 cups water
  • 1 (1 ounce) package taco seasoning mix
  • 1 (15.25 ounce) can kidney beans, drained
  • 1 (15 ounce) can tomato sauce
  • 1 (14.5 ounce) can diced tomatoes, drained
  • 0.5 cup shredded lettuce
Instructions:
  • Bring 3 cups of water to boil in a saucepan. Stir in rice, then cover and simmer for 45 minutes. Let it stand for 15 minutes off heat before serving.
  • Add taco seasoning, kidney beans, tomato sauce, diced tomatoes, salt, pepper, and lettuce, and give it a good stir.
  • Heat over medium heat until warmed.
