Effortlessly whip up this flavorful Creole dish for three in just 20 minutes.
Ingredients:
  • 1 cup frozen bell pepper and onion stir-fry (from 16-oz bag)
  • 1/2 cup thick & chunky salsa
  • 1 can (14.5 oz) Mexican-style stewed tomatoes, undrained
  • 3/4 cup uncooked instant white rice
  • 1/4 lb cooked kielbasa or Polish sausage, cut into 1/2-inch-thick slices
  • 1 cup chopped cooked chicken
Instructions:
  • Combine bell pepper and onion stir-fry, salsa, and tomatoes in a 1-quart microwavable casserole. Cover and microwave on High for 3 to 5 minutes, stirring occasionally, until the mixture boils and the bell pepper and onion are crisp-tender.
  • Combine rice into the mixture, ensuring it is evenly distributed. Cover the dish and microwave on High for 2 minutes, giving it a gentle stir halfway through the cooking process.
  • Stir in the kielbasa and chicken with care. Cover and microwave on High for 2 to 3 minutes, stirring occasionally, until both are heated through.
