Deliciously festive cookies loaded with fruity mincemeat and walnuts.
Ingredients:
  • 1 cup shortening
  • 1.5 cups white sugar
  • 3 eggs
  • 3.25 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup chopped walnuts
  • 1.5 cups prepared mincemeat, drained
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and grease the cookie sheets.
  • In a large bowl, use an electric mixer to blend butter, sugar, and eggs until fluffy; mix in vanilla. Combine sifted flour, salt, and baking soda into the butter mixture. Blend well. Add nuts and mincemeat, stirring until evenly mixed.
  • Spoon dollops of batter onto lined baking sheets, ensuring they are spaced 2 inches apart.
  • Bake until lightly browned at the edges, 8 to 10 minutes in the preheated oven.
