Buttery shortbread crust with luscious lemon filling, ideal for entertaining.
Ingredients:
  • 1 cup white sugar
  • 0.33333334326744 cup fresh lemon juice
  • 3 large eggs
  • 3 tablespoons all-purpose flour
  • 1 tablespoon lemon zest
  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 0.5 cup white sugar
  • 0.5 teaspoon kosher salt
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect cooking temperature.
  • In a large mixing bowl, whisk together sugar, lemon juice, eggs, flour, and lemon zest until fully combined. Set aside.
  • In a food processor, blend flour, butter, sugar, and salt until the dough forms a ball.
  • Separate the dough into 6 even parts and place each portion into a nonstick 6-well mini tart pan. Press the dough down onto the bottom and up along the sides of each well.
  • Place the tarts in the preheated oven and bake until the filling is set and the crust is lightly browned, usually around 25 to 30 minutes. Let the mini tarts cool on a wire rack until they reach room temperature.
