Festive mini fruit bites - perfect for gifting at Christmas!
Ingredients:
  • 250g butter, softened
  • 4.40 gm vanilla essence
  • 70.95 gm caster sugar
  • 500.00 ml plain flour, sifted
  • 42.90 gm rice flour, sifted
  • 1 tsp lemon rind
  • 165.00 ml fruit mince
  • Icing sugar mixture, to serve
Instructions:
  • Start by preheating your oven to 180°C. Then, lightly grease two mini muffin pans that each have a 1 1/2-tablespoon capacity.
  • With an electric mixer, whip butter, vanilla, and sugar until creamy. Transfer the mixture to a large bowl. Mix in the flours and lemon rind. Press 1 tablespoon of the mixture into each prepared pan hole and create a center indentation with your finger. Fill each indentation with 1 teaspoon of fruit mince. Repeat with the rest of the mixture and fruit mince.
  • Bake until shortbread is a light golden color, about 12 to 15 minutes. Remove from oven and cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
  • Finish off by presenting the fruit mince bites with a delicate dusting of icing sugar.
