Indulgent Christmas chocolate fudge bites.
Ingredients:
  • 395g can sweetened condensed milk
  • 180.00 gm brown sugar
  • 55.60 gm glucose syrup
  • 125g butter, chopped
  • 180g dark chocolate, finely chopped
  • 125.00 ml bottled fruit mince
  • 82.50 ml dried cranberries
  • 125.00 ml chopped dry-roasted hazelnuts
Instructions:
  • Prepare the cake pan by greasing and lining it with baking paper, making sure to leave a 2cm overhang on all sides.
  • Combine condensed milk, sugar, syrup, and butter in a saucepan over gentle heat. Stir continuously until the sugar has dissolved and the mixture turns glossy, about 10 minutes. Avoid boiling the mixture.
  • Turn up the heat to medium-low and let it simmer while stirring. Cook for 6 to 8 minutes until the mixture thickens and pulls away from the side of the pan. Take it off the heat and stir in the chocolate, fruit mince, cranberries, and hazelnuts until everything is well combined and the chocolate has melted. Transfer the mixture into the prepared pan and smooth out the top. Allow it to sit for 30 minutes, then cover with plastic wrap and refrigerate for at least 6 hours until it is firm.
  • Cut into bite-sized 2.5cm pieces and enjoy.
