Creamy white Christmas fudge, perfect for gifting.
Ingredients:
  • 180g macadamia nuts
  • 395g can sweetened condensed milk
  • 155g (3/4 cup) caster sugar
  • 60ml (1/4 cup) liquid glucose
  • 80g butter
  • 20.00 ml finely grated lime rind
  • 200g pkt Dream white chocolate
  • 40g pkt roasted coconut chips
Instructions:
  • Preheat the oven to 180°C. Spread the nuts on a baking tray and bake for 5-8 minutes until lightly toasted. Let them cool slightly. Line a 20cm square cake pan with non-stick baking paper.
  • Combine condensed milk, sugar, liquid glucose, and butter in a saucepan. Cook over low heat for 30-40 minutes until sugar dissolves and mixture reaches soft-ball stage. Test by dropping a small amount into cold water - if it can be formed into a soft ball with your fingers, it's done. Be cautious not to overcook; the mixture should remain white, not turn caramel in color.
  • Mix the nuts and lime rind until fully incorporated. Stir in the chocolate until melted and the mixture is smooth. Transfer to the prepared pan, sprinkle with coconut, and gently press it in. Allow to cool for 30 minutes, then refrigerate for 8 hours or overnight until firm. Cut into squares and enjoy.
