Irresistible mini quiches - party-perfect, bite-sized indulgence!
Ingredients:
  • 6 slices bacon, chopped
  • 3 eggs
  • 0.75 cup buttermilk baking mix
  • 1.5 tablespoons chopped fresh parsley
  • 2 cups shredded American cheese
Instructions:
  • 1. Preheat your oven to 350 degrees F (175 degrees C) and generously grease 2 mini muffin pans. 2. In a large skillet over medium heat, sauté bacon and onion until bacon turns crispy, typically about 5 minutes. 3. Once done, drain the mixture and set it aside for later use.
  • Combine eggs with baking mix, parsley, shredded cheese, bacon, and onion in a medium bowl. Transfer mixture to greased muffin cups.
  • Bake in the preheated oven for 10 to 15 minutes until the tops are lightly browned. Let the mini quiches cool in the pan and then carefully remove them using a small knife or spatula.
