Spicy chipotle mayo coats fried chicken breasts for a flavorful kick.
Ingredients:
  • 1 quart oil for frying
  • 1 cup bread crumbs
  • 0.25 cup grated Parmesan cheese
  • garlic salt and pepper to taste
  • 0.5 cup mayonnaise
  • 2 chipotle chilies in adobo sauce, or to taste
  • 4 skinless, boneless chicken breast halves
Instructions:
  • Preheat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C. Mix bread crumbs, Parmesan cheese, garlic salt, and pepper in a bowl; set aside.
  • Blend the mayonnaise and chipotle peppers until smooth in a blender. Transfer the mixture to a plastic bag, add chicken breasts, and ensure even coating with the mayonnaise. Press the chicken into the bread crumb mixture, shaking off any excess.
  • Fry the chicken breasts in hot oil until they are golden brown and cooked through, about 8 minutes. Use an instant-read thermometer to ensure the internal temperature reaches at least 165°F (74°C).
