Make a quick and tasty meatless Bisquick® dinner bake.
Ingredients:
  • 1 jar (4.5 oz) sliced mushrooms, drained
  • 1 cup chopped onion (about 1 large)
  • 1/3 cup grated Parmesan cheese
  • 1 1/2 cups milk
  • 3 eggs
  • 3/4 cup Original Bisquick™ mix
  • 1/2 cup pizza sauce
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup chopped green bell pepper
  • 1 to 1 1/2 cups shredded mozzarella cheese (4 to 6 oz)
Instructions:
  • Preheat oven to 425°F. Grease a 10-inch glass pie plate with shortening or cooking spray, then layer mushrooms, 2/3 cup onion, and 1/3 cup Parmesan cheese in the pie plate.
  • Whisk together milk, eggs, and Bisquick mix until smooth. Pour the mixture over the vegetables in the pie plate.
  • Bake the pizza for 20 minutes, then spread sauce over the top. Sprinkle with 1/4 cup Parmesan cheese, 1/3 cup onion, bell pepper, and mozzarella cheese. Bake for an additional 15-20 minutes until the cheese is lightly browned. Allow it to rest for 5 minutes before slicing.
