Effortless overnight pumpkin soup topped with maple bacon, hazelnuts, and sage cooked in a slow cooker.
Ingredients:
  • 45.50 gm olive oil
  • 6 middle bacon rashers, trimmed
  • 1.6kg butternut pumpkin, peeled, cut into large chunks
  • 2 brushed potatoes, peeled
  • 1 large brown onion, chopped
  • 5.00 gm ground ginger
  • 2.50 gm mixed spice
  • 765.00 gm salt-reduced chicken stock
  • 126.25 gm thickened cream, plus extra to serve
  • 54.00 gm maple syrup
  • 62.50 ml chopped hazelnuts
  • 40.00 ml fresh sage leaves
  • Coles Bakery pane di casa bread, sliced, to serve
Instructions:
  • Halve the bacon slices. Store half of the bacon in the fridge for later. In a large frying pan, heat 2 teaspoons oil over medium-high heat. Cook the other half of the bacon for 3 minutes per side until golden brown. Transfer the cooked bacon to a slow cooker along with pumpkin, potato, onion, ginger, mixed spice, and stock. Season with salt and pepper. Cover and cook on LOW for 6 hours (or HIGH for 3 hours) until the vegetables are tender. Remove and discard the bacon before serving.
  • Blend the soup with a stick blender until smooth, then stir in the cream and season with salt and pepper to taste.
  • Preheat the oven to 200C. Place streaky bacon on a rack set over a baking paper-lined tray. Brush with maple syrup generously. Bake for 15 minutes, then flip and bake for an additional 5 minutes until crisp. Allow to cool for 10 minutes before breaking into large pieces.
  • In a small frying pan over medium-high heat, heat the remaining tablespoon of oil. Add hazelnuts and cook for 2 minutes, stirring occasionally, until lightly browned. Quickly add sage leaves and cook for 20 seconds until crisp. Drain on paper towel.
  • Divide the soup into serving bowls. Garnish with a swirl of extra cream and a drizzle of the remaining oil. Sprinkle with maple bacon, hazelnuts, and sage. Serve alongside fresh bread.
