Cozy up with a delicious Italian pasta fagioli soup loaded with beans, veggies, tomatoes, and herbs - perfect for a chilly day!
Ingredients:
  • 1 tablespoon olive oil
  • 1 carrot, diced
  • 1 stalk celery, diced
  • 1 thin slice onion, diced
  • 0.5 teaspoon chopped garlic
  • 4 (8 ounce) cans tomato sauce
  • 1 (14 ounce) can chicken broth
  • 1 tablespoon dried parsley
  • 0.5 tablespoon dried basil leaves
  • freshly ground black pepper to taste
  • 1.5 cups ditalini pasta
  • 1 (15 ounce) can cannellini beans, drained and rinsed
Instructions:
  • In a saucepan over medium heat, warm olive oil. Sauté carrot, celery, and onion until soft. Stir in garlic and sauté briefly.
  • Combine the tomato sauce, chicken broth, parsley, basil, and pepper in the pot and let it simmer for 20 minutes.
  • 1. Boil a large pot of lightly salted water. Add ditalini pasta and cook for 8 minutes or until al dente. Drain the pasta.
  • Stir in beans and cooked pasta, then simmer for 1 to 2 minutes until heated through.
